Fishing in the calm outdoors is a favorite pastime for those looking to escape the busyness of city life.  However, for many, it is a means to earn a living and, for some – even a professional sport.  Whatever your preference and purpose for fishing, here are a few tips for cooking on outdoor cooking grills to make your fishing trips that much more memorable and tasty!

Best spices for fish

There’s no doubt about it; the salty fresh taste of fish is a taste explosion on its own. But, that’s not to say that seafood can’t do without a dash of seasoning and spices to make it that much more delectable. Actually, by adding the right complementary spices, you can enhance the taste of the ocean even more. And the correct preparation methods can elevate your outdoor cooking grill techniques to the next level.

Tarragon

Tarragon (which tastes a bit like licorice) can be added to your sauce to give your fish dish a more well-rounded bite with its sweet, salty, and bitter flavor profile.

Parsley

Parsley is another fresh herb that goes well with almost any savory dish and works well with fish due to its fresh and unmistakable herby taste.

Chives

Chives add the sweetness of onion to a fish dish. Plus, chives add a base layer of flavor support to bring out the taste of other ingredients.

Smoked paprika

Bold and unmistakably red in color, smoked paprika adds a subtle smoky taste to any dish.  With sweet, peppery, and spicy notes, paprika is an all-around spice used in marinades, rubs, and sauces.

Ginger

Ginger is spicy and sweet and provides a unique seasoning element to any fish dish. It is excellent for fish sauces because it adds a warm and comforting yet pungent flavor to seafood.

Tumeric

Tumeric adds a subtle, earthy flavor to fish dishes. As a complementary spice, it serves as the perfect base layer for other, more complex flavors.

Best accompaniments when cooking on outdoor cooking grills

What would a fish dish be without something on the side to go with it? Side dishes are often the perfect accompaniments to bulk up and round off an outdoor seafood meal. And with the KUDU, you can prepare some pretty unique side dishes to complete your seafood dish. Some of our personal favorites include:

  • Grilled or steamed vegetables.
  • Potato salad or grilled potatoes. Potatoes always make a great side dish no matter how you prepare them – roasted, fried, or mashed.
  • Pasta
  • A peach salad
  • Couscous or Quinoa

How would you like your fish?

The beauty of catching and cooking fish in the outdoors is that it’s such a versatile dish and, as such, can be prepared in many ways. Crunchy and soft, or plain and meaty – the choice is yours.

Battered fish

If you like your fish a little more crunchy, you can coat your fish in a pre-made egg and flour batter before frying.  Best fish to use for battering: snapper, barramundi, and hake.

Baked

Baking fish is a healthier option for those looking to reduce the oil (and fat) content when cooking fish. In addition to this, it’s also a simple cooking technique to master and requires few ingredients apart from basic seasoning. Best fish to use for baking: haddock, cod, bass, and tilapia.

Grilled

Pan-fried fish is quick and straightforward to do. Just place your fish in a hot pan with some oil or butter and fry for a few minutes until the fish is no longer translucent and easily flakes apart with a fork.  Best fish for frying: halibut, trout, and shrimp.

Steamed

Steaming fish is also a healthier option, as it retains more of its healthy omega fats and nutrients. Best fish for steaming: tilapia, snapper, and cod.
