Grilled Sweet Potatoes
  1. You need the right heat to gently cook grilled sweet potatoes. Light up your charcoal in the KUDU and let them burn to embers with a layer of white ash.
  2. While the charcoal is heating up, peel the sweet potatoes and slice lengthwise into 1/4 inch-thick pieces. You need them thick so you can have them over the fire for as long as possible.
  3. Coat the sweet potato slices with olive oil and lightly sprinkle with Kosher salt.

Cilantro Lime Dressing

  1. Combine cilantro, lime juice, lime zest, 1/4 cup of evoo and a pinch of salt into a small mixing bowl. This enhances the sweetness of the potatoe.
  2. Once the grill is hot, lay the sweet potatoes slices onto the grill grate. Cover and cook on each side for approx. 5 minutes. Don't forget to keep an eye on them, you don't want them to burn.
  3. Toss the sweet potatoes in a bowl with dressing and serve hot! Feel free to serve them as a side with any of our delicious grilled meat recipes.
