Summer Feast
- You need the perfect temperature for your grilled fruit. Light your charcoal in the KUDU and let them burn to embers with a layer of white ash.
- While the charcoal is prepping prepare your watermelon and pineapple by cutting them into slices roughly 1/2 inch - 1 inch thick.
- While the charcoal is prepping prepare your colossal shrimp.
- Pull the shrimp out of the shell leaving just the meat at the tail secured.
- Rest the shrimp meat on top of the shell.
- Place your pre-cooked crab cakes in a bowl.
- Drizzle a little olive oil on shrimp and crab cake.
- Drizzle a little olive oil and salt and pepper over the fruit.
- Adjust your grill height over the embers at medium heat (approx. 400 degrees).
- Move your KUDU grill grate to that height and place your shrimp, fruit, and mushrooms on the grill.
- Rotate your shrimp, fruit, and mushrooms on all sides until sufficiently cooked with light grill marks.
- Place the shrimp shell side down on the KUDU and stuff the top of the shrimp with the crab cake until warm.
- Remove and serve your grilled fruit.
