BBQ Pork Chops & Okra
  1. You need the perfect heat for your grilled bbq pork chops. Light your charcoal in the KUDU and let them burn to embers with a layer of white ash.
  2. While the charcoal is prepping prepare your pork chops by drizzling with olive oil and seasoning with coarse salt and pepper.
  3. Place BBQ sauce in bowl with basting brush.
  4. Cut whole okra in half, length-wise.
  5. Lightly coat the okra with olive oil, salt and pepper.
  6. Adjust your grill height over the embers at medium heat. To locate medium heat, place your hand over the embers and find the height you can count to 5 before having to remove your hand from the flame (350-400 degrees).
  7. Move your KUDU grill grate to that height and place your pork chops on the grill.
  8. Turn your pork chops every few minutes, browning all sides (approx. 12-15 minutes).
  9. Raise your grill surface about 3 inches and begin saucing your pork chops turning as needed to build a nice char.
  10. While saucing your pork chops swing in your KUDU cast-iron skillet and bring to a high heat, drizzle oil and add okra.
  11. Turn okra frequently allowing all sides to cook, remove from heat while al dente (do not overcook).
  12. Continue turning and basting the pork chops with BBQ sauce.
  13. Use a meat thermometer to make sure the pork chops are at least medium rare or 145 degrees.
  14. Remove and serve your grilled bbq pork chops and okra.
