December 5, 2023 Spiced Corn Riblets 4 corns on the cob 100 g butter, softened 3 cloves garlic, crushed 5 ml (1 tsp) ground cumin 5 ml (1 tsp) paprika 5 ml (1 tsp) paprika 5 ml (1 tsp) chili flakes 60 ml (4 Tbsp) mayonnaise Handful of coriander, finely chopped Handful of parsley, finely chopped Salt and black pepper, to taste 1 wheel of feta, crumbled 1 - 2 limes, cut into wedges Fresh coriander, to taste Preheat the KUDU over medium-high heat.Very carefully, cut each corn lengthways (vertically) through the cob into quarters and set aside.In a medium bowl, mix the butter, garlic, cumin, paprika, coriander, chilli flakes, salt, and pepper.Spread the spiced butter onto all sides of the corn quarters.Grill the corn cobs until charred on the outside and cooked through.Mix the mayo, coriander, and parsley in a separate bowl and season to taste.Serve the corn with the mayo sauce, crumbled feta (*optional), lime wedges, and fresh coriander.
