Spiced Corn Riblets
  1. Preheat the KUDU over medium-high heat.
  2. Very carefully, cut each corn lengthways (vertically) through the cob into quarters and set aside.
  3. In a medium bowl, mix the butter, garlic, cumin, paprika, coriander, chilli flakes, salt, and pepper.
  4. Spread the spiced butter onto all sides of the corn quarters.
  5. Grill the corn cobs until charred on the outside and cooked through.
  6. Mix the mayo, coriander, and parsley in a separate bowl and season to taste.
  7. Serve the corn with the mayo sauce, crumbled feta (*optional), lime wedges, and fresh coriander.
