KUDU Fried Quail
  1. You need the perfect temperature for fried quail on the grill. Light your charcoal in the KUDU and let them burn to embers with a layer of white ash.
  2. Adjust your grill height over the embers at medium heat. To locate medium heat, place your hand over the embers and find the height you can count to 5 before having to remove your hand from the flame. This is the height for medium heat (approx. 400 degrees).
  3. Move your KUDU cast iron to that height and add the peanut oil to the height of 1 inch.
  4. Put each quail in the egg wash and coat lightly with flour salt and pepper.
  5. When the oil reaches the temperature of 350 degrees add the quail.
  6. Cook for 5-7 minutes. Flip the quail and cook for another 5-7 minutes. The quail is done when the meat is slightly firm (it will feel like a cooked chicken breast) and reaches an internal temperature of 180 degrees.
  7. Remove from oil and let rest.
  8. KUDU tip: for the perfect fried quail on the grill, don't let the oil get hotter than 350 degrees, use the elevation bars to keep a steady temperature.
