Tangy spicy chicken wings

FOR THE SAUCE

  1. In a medium bowl, whisk together lemon zest, salt, paprika, garlic powder, onion powder, thyme, and cayenne. Pat chicken wings dry and place in a large bowl. Add spice mixture and toss to coat.
  2. Light your charcoal in the KUDU and let them burn to embers with a layer of white ash.
  3. Adjust your grill grate height over the embers to medium heat (approx. 350 degrees).
  4. Add the chicken wings to the grill grate and grill until the skin is crispy on both sides and the meat is cooked through (about 15-20 minutes).
  5. For the dipping sauce, in a medium bowl, whisk together mayo, lemon juice, mustard, horseradish, chives, and hot sauce.
  6. Serve wings hot with dipping sauce.
