While the oil heats, mix buttermilk, eggs, vanilla essence, and melted butter in a large bowl. Set aside.
In a separate large bowl, combine flour, baking powder, salt, and sugar.
Add the wet and dry ingredients together, don’t mix too hard. Mix until a dough has formed.
Roll the dough onto a floured surface with a rolling pin. The dough should be about ¼ thick. Grab a cookie cutter to form the donut shape and a smaller one to cut out the middle.
The oil should be hot and sizzling. You want to make sure the oil is always between 365 F and 380F. If it starts to edge up toward 400 F, add some cold oil to cool it down. If it dips below 350 F, remove the doughnuts temporarily, which will allow the oil to climb back up. One you have the perfect temperature, place the donuts carefully into the KUDU Dutch Oven. Fry for 20 seconds and flip. Repeat fry for 20 seconds on the other side. The donuts should be fried to a golden-brown color. Once cooked, wrap the donuts in a paper towel to remove excess oil.
When the donuts are ‘cool’ enough to handle, combine the granulated sugar with cinnamon and roll the donuts into the mixture for coating.
