Pumpkin fritters

Batter
 1 ½ cups cooked pumpkin
 1 Egg
 ½ tbsp salt
 1 cup self-raising flour
 1 ½ tsp baking powder
 1 cup oil to fry the fritters in
Syrup
 1 cup sugar
 ½ cup water
 ¼ cup Milk
 1 tbsp butter
 1 tsp cornflour - mixed with a little cold water.

Light your charcoal in the KUDU and let them burn to embers with a layer of white ash.

Mix cooked pumpkin, eggs, and salt.

Sift self-raising flour and baking powder together and mix with the pumpkin mixture.

Adjust your cast iron skillet to medium heat and add oil.

Once the oil is hot, drop-in heaped teaspoons of batter, making sure that they are nicely spaced apart, and fry each side until lightly browned.

Remove from pan and drain on kitchen paper.

Mix sugar, water, milk and butter and bring to a boil.

Mix cornflour and a little water - add to the syrup mixture to help thicken.

Take off the heat.

Pour syrup over the warm pumpkin fritters.

Add cinnamon sugar on top (optional).
