Light your charcoal in the KUDU and let them burn to embers with a layer of white ash.
While the charcoal is heating up, peel the sweet potatoes and slice lengthwise into 1/4 inch-thick pieces.
Coat the sweet potato slices with olive oil and lightly sprinkle with Kosher salt.
Combine cilantro, lime juice, lime zest, 1/4 cup of evoo and a pinch of salt into a small mixing bowl.
Once the grill is hot, lay the sweet potatoes slices onto the grill grate. Cover and cook on each side for approx. 5 minutes.
Toss the sweet potatoes in a bowl with dressing and serve hot!
