KUDU Chili

 14 oz Beef
 14 oz Pork
 10 Bacon
 4 Chili beans (Kidney, Pinto, and Reds)
 Olive Oil
 Chili Seasoning
 4 Bell Peppers
 4 Jalapenos
 2 Diced Green Chilis
 1 Heinz Chili Sauce
 8 oz Canned Tomatoes
 1 Tomato Paste

Light your charcoal in the KUDU and let them burn to embers with a layer of white ash.

While the charcoal is prepping prepare your beef and pork by cutting it into 1/2 inch squares and cover with a light coat of olive oil with coarse salt and pepper.

Dice the jalapenos and bell peppers. Drizzle olive oil, salt & pepper.

Adjust your grill height over the embers at medium heat. To locate medium heat, place your hand over the embers and find the height you can count to 3 or 4 before having to remove your hand (approx 500 degrees).

Move your KUDU cast-iron skillet to that height and place your beef and pork into the plancha.

You just want to brown the outside of the steak and pork, do not cook through. Once all sides of the beef and pork are browned transfer to KUDU Potjie.

Finish your bacon in the cast iron. Transfer to potjie.

Remove most of the bacon grease from the cast-iron but leave a little and add your diced peppers/jalapenos. Sweat the peppers until translucent and pour into potjie.

Pour the canned beans, chilis, and tomatoes into potjie.

Add chili seasoning and Heinz chili sauce.

Stir in all ingredients thoroughly.

Place the potjie over low heat or low-burning coals. Cover.

The potjie should come to a simmer where it is gently bubbling for all the flavors to meld. Check every 30 mins, stirring gently.

Remove and serve.
