Hav’s KUDU Breakfast Pizza

Designed specifically for the KUDU, this meat, egg and veggie breakfast pizza is a hearty delight that's ideal for any time of day.

Hav's KUDU Breakfast Pizza

 6 sticks strips of bacon
 ¼ lb breakfast sausage
 ½ lb chorizo
 1 clove garlic, minced
 ½ green bell pepper, chopped
 ½ red bell pepper, chopped
 4 mushrooms, sliced
 1 frozen pizza dough, thawed
 6 eggs, beaten
 1 tsp Italian seasoning
 ½ tsp red pepper flakes
 6 oz mozzarella cheese
 6 oz cheddar cheese
 salt & pepper, to taste

Stoke up a fire and get plenty of coals super hot with cast iron only a couple of inches away.

Cook bacon on grill to get smoke, and place on paper towel to cool.

Brown sausage and drain grease.

Mix in garlic, peppers, onions, and mushrooms to pan with sausage. Saute until softened, about 5 minutes. Crumble bacon and stir in. Remove mixture and set aside.

Line base of pan with pizza dough. Create the "crust" of the pizza by pinching the dough vertically along the side of the cast iron, up to 1 inch.

Fill the crust with meat & veggie mixture.

Beat eggs. Add in Italian season, red pepper, and salt & pepper. Pour over meat & veggie mixture.

Sprinkle cheese on top of egg, meat & veggie mixture.

Cover cast iron pan with flat lid and place on fire. Place 3 goals on top of lid as well as bake.

Bake 25-35 minutes or until eggs are no longer jiggly in the middle.

Remove from fire. Let cool a few minutes, slice and serve.

Havird Usry, an Augusta native, graduated from Clemson University, where he was four year letterman in soccer being named MVP his senior year. He left Clemson with a degree in International Business and Spanish.

After he pursued pro soccer briefly after graduation he was naturally drawn back home to jump into the family business. Havird has led and managed major growth in the business over the past 7 years. Fat Man’s Mill Cafe and Enterprise Mill Events + Catering are the two operation he currently operates with a new concept on the way that is in construction phase right now. Fat Man’s is a traditional meat + 2 southern restaurant in Downtown Augusta. Enterprise Mill Events is Augusta premier wedding venue and catering service that plans and executes on and off site events in the Augusta area.

Hav thought the next step for their business was to be more culinary based. This led Hav to Helm’s Culinary Institute, where he graduated as with a culinary arts degree, first in his class. Hav also appeared on Food Network in 2016 on Season 12 of Next Food Network Star.
