Grilled Pineapple & Red Onion Salad

Charred grill flavor and red onion add a unique twist to sweet pineapple in this recipe that you will want to add to every grilling night menu.

Grilled Pineapple & Red Onion Salad

 1 whole pineapple, skinned but not cored and cut into thick rings
 2 red onions, sliced into a few very thick rings
 1 handful or more fresh basil leaves
 1 lemon, juiced and zested
 a few splashes of olive oil
 sea salt and fresh ground pepper to taste

Preheat KUDU grill.

Brush or drizzle the pineapple and onion with olive oil. Evenly coat them and season to taste with salt and pepper. Try to keep the onion rings intact as you do this.

Grill the pineapple for about 5 minutes per side or until golden grill marks appear and the fruit softens. Meanwhile, grill the onion until soft and lightly charred.

Remove from grill. Quarter the grilled pineapple slices into wedges and roughly chop the red onions.

Toss everything with the lemon zest, lemon juice, and basil leaves. Enjoy!
