Tim Underwood

Tim has been cooking for over 23 years.  He is a Certified Executive Chef, a Certified Culinary Administrator, and a Certified Dietary Manager.

Tim is currently the corporate chef for Stewbos restaurant group and the executive chef for Merry Acres Event Center. He has been with Merry Acres for almost 2 years. The new menu helps bring a broader focus into pub faire or more small plates, though certainly keeping a strong tie in for its premium steakhouse origins.

Tim also directly oversees The Catch seafood and oyster bar. He wrote and developed the new menu for The Catch and helped narrow its focus towards fresh, local seafood.

Prior to that, Tim was the Food Service Director for Pepi Foods in Dothan, AL.  He managed 8 dining centers, a large catering operation and a commissary kitchen. He was in charge of all recipes, menu development, HACCP and food safety and more.  It was a large job and it was very exciting.

He owned and operated my own restaurant, the Rocket.

Time has always had a passion or flair for the culinary arts and he loves to play with food. He loves everything from the complex to the simple, as long as the food is able to shine or if the dish tastes good.
